Oven specifics: Spooner-Vicars and Werner-Lehara ovens, 250-320 feet in length with 5-8 heat zones, indirect heat, convection ovens, that require 3800-5400 lbs of dough per hour each total of 11,400-16,200lbs.; a normal 24hr day is 300K plus

 

Supervise three overlapping shifts of 65 temporary associate employees per 8 hour shift for up to six finished product packaging lines in excess of 15,000lbs per hour; determine order of production timing and process, employee positions within production, and procedures to best meet weekly shipping schedule demands

 

Schedule and maintain three batching systems to supply ovens; each oven has its own mixer and dough batch system that are fed by one premix batch system; supervise and coordinate 4 major steps to take dry ingredients to bulk finished goods throughout physically expansive processing area via automated human to machine interface (HMI) system

 

Produce the highest quality dog treats in complete compliance with all Standard Operating Procedures (SOP), Good Manufacturing Practices (GMP), Hazard Analysis Critical Control Point (HACCP), Federal Drug Administration (FDA), Key Performance Indicators (KPI) and other in-house guidelines for quality standards, requirements, policies, and procedures; coordinate directly with Quality Assurance Manager and Food Safety Manager to continuously monitor quality and standards testing; worked directly with technical writers and Food Safety Manager to develop plant’s first SOP for the biscuit/treat department

Quality results: Consistently produce finished product out of the oven running at levels of 10% range on moisture, top appearance chart categories, under .65% water activity (Aw) and strength charts with break tests of 12-15 lbs per square inch

 

Only team within plant to consistently maintain “No Loss Time” safety record due to zero accidents; conduct monthly training in accordance with Occupational Safety and Health Administration (OSHA) standards
